Ingredients


Makes: 1 loaf (12 slices)
  • 3 C (750 ml) flour
  • 1/3 C (80 ml) sugar
  • 1 Tbsp (15 ml) baking powder
  • 1 tsp (5 ml) Sea Salt (Grinder)
  • 1 tsp (5 ml) baking soda
  • 2 tsp (10 ml) Toasted Onion
  • 1 C (250 ml) grated zucchini
  • 1/3 C (80 ml) melted butter
  • 2 eggs
  • 1 C (250 ml) buttermilk
  • 3 Tbsp (45 ml) grated Parmesan cheese

Preparation


 
  • Preheat oven to 350° F (175° C). Grease and flour a 9" x 5" (23 x 12.5 cm) loaf pan.
  • Whisk first 5 ingredients in a large bowl.
  • In another bowl, mix Toasted Onion with grated zucchini and allow to sit for at least 10 minutes.
  • Stir melted butter, eggs, buttermilk and Parmesan cheese into flour mixture. Add zucchini mixture and stir to combine.
  • Pour into prepared loaf pan and bake for 50 - 65 minutes.
