Ingredients


Makes: 6 servings
  • 1 Tbsp (15 ml) Toasted Onion
  • 1/2 tsp (2,5 ml) Curry Seasoning
  • 2 C (500 ml) dry red lentils
  • 3 sweet potatoes, peeled and cut into ½” (1.25 cm) pieces
  • 1 can (14 oz/398 ml) low-sodium diced tomatoes
  • 5-6 C (1 1/4-1 1/2 L) prepared
  • Sea Salt (Grinder), to taste
  • 2 C (500 ml) fresh or frozen spinach, coarsely chopped
  • 1 recipe prepared Le Taj Finishing Sauce Mix

Preparation


 
  • In Everything Pan, over medium heat, combine Toasted Onion, Madras Curry, lentils, potatoes, tomatoes, and Vegetable Bouillon. Season with Sea Salt, and bring to a simmer over medium-high heat.
  • Reduce heat to low, cover and cook, stirring occasionally, until lentils and potatoes are tender, 20–25 minutes. Add extra Bouillon if required.
  • Add spinach and Le Taj Secret Sauce, and cook briefly, until heated through.

Chef’s Serving Suggestion: Serve over rice, quinoa, or bulgar.
