Makes : 4 servings
  • 1/2 English cucumber, peeled and finely diced
  • 1 small onion, finely diced
  • 2 garlic cloves, crushed
  • 1 can (28 oz /796 ml) crushed tomatoes
  • 2-3 C (500-750 ml) or vegetable prepared
  • 1 red bell pepper, finely diced
  • 1 green bell pepper, finely diced
  • 2 Tbsp (30 ml) balsamic vinegar
  • 2 tsp (10 ml) Bruschetta Seasoning, or Tapenade Seasoning
  • 2 Tbsp (30 ml) olive oil
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste

Preparation


 
  • Combine all ingredients in a glass or ceramic bowl. Chill for a minimum of 2 hours to allow flavours to develop.
  • Serve in chilled bowls.
