Ingredients


Makes: 4 servings
  • 4 C (1 L) mixed greens, finely chopped
  • 2 cans (14 oz/398 ml) lentils
  • 1 C (250 ml) cooked pearl or pot barley
  • 1 1/2 C (375 ml) diced apple, peach, plum, or grapes
  • 1/2 C (125 ml) crumbled feta
  • 1/4 C (60 ml) Quickled Red Onions, finely chopped
  • 1/2 recipe prepared Greek Dressing
  • 1/3 C (80 ml) toasted nuts, your choice, chopped
  • to taste

Preparation


 
  • In a large bowl, combine greens, lentils, barley, apple, feta, and onion.
  • Pour dressing over the salad and toss to combine.
  • Just before serving, top with nuts and topper.

Tip
