Ingredients


Makes: 4 servings
  • 2 tsp (10 ml) olive oil
  • 8 eggs, beaten until frothy
  • 1 1/2 C (375 ml) liquid egg whites
  • 1/4 C (60 ml) 2% milk, or dairy-free alternative
  • 2 Tbsp (30 ml) water
  • 1 Tbsp (15 ml) Lemon Dilly Dip Mix, or Chives & Bacon, 3 Onion, or Guacamole dip mix
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste
  • 1/4 C (60 ml) low-fat cheese, grated

Preparation


 
  • In an Fry Pan, heat oil over medium-high heat.
  • Combine remaining ingredients, except cheese, in a bowl.
  • Pour into pre-heated Frying Pan. As eggs begin to thicken, stir with a Corner Spatula until eggs are set but still soft.

Tip


 

Make it vegan: Swap eggs for tofu and use soy cheese.
